Marcos Sevilla has been named Executive Chef of the Naples Grande Beach Resort

Naples Grande Beach Resort is pleased to announce the appointment of Marcos Sevilla as the new head chef.

Marcos Sevilla is a graduate of The Culinary Institute of America, Hyde Park, NY. As an active member of C-CAP, the largest independent catering and hospitality fellowship program in the country, Seville has accepted a scholarship to attend the CIA and joins the Naples Grande Beach Resort team with an exceptional culinary education.

With an extensive background in hospitality spanning over a decade at leading hotels, Seville’s culinary journey includes time at the Arizona Biltmore, the Renaissance Glendale Hotel & Spa, The Peabody Orlando (now known as Hyatt Regency Orlando) and the Omni Scottsdale Resort & Spa in Montelucia.

As Executive Chef of the Naples Grande Beach Resort, Seville oversees the operation of the resort’s six restaurants, including The Catch of the Pelican and the lobby-level Mantra Lounge.

At the property’s signature restaurant, The Catch of the Pelican, Chef Seville aims to enhance the dining experience of guests by adding a luxurious feel to the flagship restaurant without the expense of fine dining. Seville plans to expand the menu by cultivating new dishes inspired by Florida’s Caribbean influence. Fresh and local ingredients highlight a Florida menu with fine seafood and dried steaks.

Coming from the west coast, Seville is keen to delve into the palates of the east coast and, in particular, Florida’s lively food scene. Seville also wants to incorporate more fun, immersive dining experiences, including cooking classes, special tastings, cupcake decorating, and pizza making, where he and his team can interact and interact with guests on a daily basis.

Originally from Phoenix, Seville has settled in the Naples area with his wife and four children and looks forward to sharing his talents with the community at the Naples Grande Beach Resort.
